Active Manuka Honey belongs to the Leptospermum group of plants which are  found  in both Australia and New Zealand. These Leptospermum honeys are unique as they contain an additional antibacterial component that is unique to honeys from Leptospermum plants.
 
Professor Peter Molan and the team at the Honey Research Unit, Waikato University, New Zealand have been investigating the therapeutic benefits of Manuka Honey for over 20 years.

His researched proved that some Manuka honeys are more effective than others at inhibiting the growth of many bacteria and fungi. This is due to two separate active components found in Leptospermum honey.

One activity comes from hydrogen peroxide which is released from the enzyme glucose oxidase while the other comes from a natural phytochemical recently identified as methylglyoxal which makes this honey doubly potent. There is evidence that these two antibacterial components may have a synergistic action, ie. their combined effect is greater than the sum of their individual actions.

Hydrogen Peroxide

The first and most common form of antibacterial activity is due to Hydrogen peroxide, a powerful cleansing agent, that is slowly released due to the action of an enzyme glucose oxidase, when Manuka honey is taken internally or applied topically to the skin. It produces a strong antiseptic and healing effect without damaging sensitive tissues.

However not all Manuka honeys have this ability to produce Hydrogen peroxide. Some do not contain sufficient levels of the enzyme responsible for the release of hydrogen peroxide from the honey.
